1/2 oz Fresh lime juice
1/2 oz Peach flavored brandy
1 oz Honey mix (50/50 honey/water)
1 oz Light Puerto Rican rum
2 oz Diced fresh pineapple
2 oz Fresh mint leaves (Tightly packed)
6 oz Crushed ice

Put everything in a blend and blend at high speed for 20 seconds. Pour into a martini glass (Originally a Hurricane glass but I have none of those so this will have to do) and garnish with the tip of a mint sprig. You will ned to skim of the top from all the foamed pineapple. In my opinion the amount of diced pineapple creates a little to much foam, next time I’ll try it with 50/50 dices/juice.
